I am a chef hailing from the great state of Minnesota, and let me tell you, I take my casseroles and hotdishes very seriously. But, my true passion lies in helping others make healthy lifestyle changes through food. I believe that eating healthy should be delicious and satisfying, not a punishment. And as a Minnesotan, I know that we love our comfort food, but that doesn’t mean it can’t be healthy too.

I started my chef business with the mission to prove that healthy food can be just as comforting and indulgent as our beloved hotdish. I am on a mission to change the way people think about healthy food, one plate at a time. I want to show that eating healthy can be fun and enjoyable, and that it’s not about depriving yourself of your favorite foods, it’s about finding healthier versions of them.

 

Q: Please tell us a little bit about your family. Do you have any pets?
Yes, I am the proud owner of two fabulous fur babies. First, there’s Mufasa, my sweet and timid pup. He’s more of a lover than a fighter, and he’s definitely not the leader of the pack. And then there’s Wheezy, the boss of the house. She’s a force to be reckoned with. She’s always in charge and knows how to get what she wants. She’s the mastermind behind all the mischievous deeds happening in the house, and Mufasa is just her loyal sidekick.

Q: How long have you lived or worked in Eden Prairie?
I have lived in Eden Prairie for almost 5 years.

Q: What inspired you, or led you to your current career/endeavor? What do you love the most about what you do?
It was during the pandemic that I found the motivation and drive to turn my entrepreneurial aspirations into a reality. The uncertainty and challenges of the times propelled me to take action and start CHEFRESH. It was more than just a desire, it was a calling. The pandemic presented a unique opportunity for reflection and self-discovery, and I realized that being an entrepreneur was my true passion. It was a difficult and uncertain time, but it was also the perfect time to start something new and make a change in my life. The pandemic may have been a hindrance for many, but for me, it was the catalyst that propelled me to pursue my passion and start my own business. I am deeply fulfilled by the opportunity to assist individuals in nourishing their bodies with wholesome and nutritious food. I love being able to be able to support those who may be struggling to make healthy choices in their eating habits, and to have a positive impact on their overall well-being. The power of food cannot be understated, and I am passionate about using it as a tool to positively transform the lives of others. The ability to make a meaningful difference in the health and happiness of others through something as fundamental as food is truly rewarding.

I absolutely love Campiello and Redstone.

Q: Who is someone interesting in our our community that you have met or inspires you?
Kristin Derus is an inspiration to me. She is dedicated to making our community a better place through her tireless efforts and commitment to improving the lives of those around her. She runs a business that specializes in biofeedback, which is a cutting-edge technology that helps individuals achieve physical and emotional well-being. What’s truly remarkable about Kristin is her desire to share her services with everyone, regardless of their financial situation. She truly cares about the well-being of others and works hard to make sure that everyone has the opportunity to benefit from biofeedback and live a healthy and fulfilling life. Her passion and dedication to helping others is truly admirable and makes her a valuable member of our community. She is a shining example of what it means to be a good person, and I am grateful to have her as a role model in my life.

Q: What is you favorite season? Favorite holiday?
Ah, summertime! The season of sunshine, BBQs, and all the outdoor activities your heart desires. I am a huge fan of summer.

Q: If you could travel anywhere in the world, where would you go, and why?
If I could travel anywhere in the world, I would totally jet off to Brazil! The food is out of this world, literally, so good they should be considered extraterrestrial. Plus, who doesn’t love a country that knows how to throw a proper carnival?

Q: What is a current or former business that makes you the most nostalgic about Eden Prairie?
The Lions Tap holds a dear place in my heart.

Q: What is something on your bucket list?
A bucket list item? Climbing a mountain you say? Well, sign me up! I mean, who wouldn’t want to conquer a giant hunk of rock and dirt, right?

Q: Who or what inspires you to be a better person?
I find my inspiration from the community. When we surround ourselves with people who are working towards making a positive impact in the world, it can be incredibly motivating. Being part of a community of like-minded individuals can give us a sense of purpose and belonging, and can make us feel like we are part of something bigger than ourselves.

Q: What is something unique or interesting that most people don’t know about you?
I just learned how to juggle ????.

Q: What is your favorite movie or TV show?
Impractical Jokers.

Q: What advice do you like to share with other people?
Pursuing your dreams is one of the most fulfilling things you can do in life. When you chase your dreams, you are able to fully immerse yourself in the journey and give it your all.

Q: Where do you see yourself in 5 or 10 years?
In the next 5 to 10 years, I envision my business flourishing and me living my best life. I see myself surrounded by a dedicated team, working towards a common goal of success and growth. I hope to be fully immersed in my work, doing something I am passionate about and that brings me great fulfillment. Additionally, I hope to experience new and exciting things, travel to different places and make unforgettable memories with my loved ones. I see myself living life with purpose, balance and joy. I can’t wait to see what the future holds and to make my dreams a reality.

Q: If you could have lunch with someone alive or not, who would you choose, and why?
Mitochondrial Eve. She’s the first modern human who was the ancestor of us all. What was her life like?

Q: What is the most beautiful place you have ever been?
New Zealand is my idea of heaven.

Q: What are your favorite hobbies or activities that you enjoy?
I love biking, snowboarding, and roller skating.

I love Confederacy of Dunces.

Q: If you could have a super power, what would it be?
The power of flight.

Starting a business.
